Pineapple Jam & Oolong Tea Ganache Cronut

Today is my wife’s birthday so to kick it off I got her favorite pastry ….. the world famous Cronut from the Dominique Ansel Bakery. The flavor for July 2023 is Pineapple Jam & Oolong Tea.

Chef Dominique Ansel invented the cronut in 2013, it’s a hybrid of a croissant and a donut. While the cronut is 10 years old it is still incredibly popular. I placed a pre-order but on a Monday in the summer there are plenty of Cronuts available.

The presentation was typical cronut perfection. Layers of flaky, buttery dough dipped in sugar, topped with bright yellow icing and garnished with a small dusting of oolong tea. The ganache filling was a perfect pineapple flavor with just a hint of oolong tea on the finish. Nicely balanced flavors.
